			<content:encoded><![CDATA[<p>Jimi Hilton, food editor to Currents Magazines works his way through the culinary alphabet…and finally gets to X…with Xichuan Pepper…And he has another, very spicy “X-named ingredient” still in reserve…</p>
<p>We’ve been itching to get to the letter X in our ongoing alphabetical peregrination of ingredients…just because it seem like such a challenge to find an ingredient starting with an X.</p>
<p>And yes; you might say we’ve cheated a tiny bit…But “Xichuan” is a perfectly correct English language spelling for  Szechuan, or “Sichuan” which is our least preferred spelling for this Northern Chinese province that is famed for its spicy dishes.  And guess what? The scientific name for Xichuan pepper starts with an X too, which is xanthoxycom peperitum.</p>
<p>Xichuan pepper is not related at all to black pepper – nor to green or red bell peppers – and not to chili peppers either. It is actually the outer seedpod of the Chinese prickly ash tree. It is hot – but not nearly as hot as black or chili pepper. It is highly aromatic – especially when toasted a bit beforehand – and one of the ingredients in Chinese five spice seasoning. It blends beautifully with fresh ginger root and with hotter red, white and black peppers to leave an added “tingly” sensation of spiciness in the mouth. For several years, Xichuan peppercorns were banned in the U.S. because they carried a virus that is fatal to citrus fruit trees…and the Chinese American community was up in arms, since Xichuan food cannot be made without it. But it’s back now – perfectly safe after being pre-heated a bit before packaging – and readily available again. Here is a very quick and easy recipe for using this mouth-watering ingredient:</p>
<p><strong><span style="text-decoration: underline;">Spicy Xichuan Stir Fry Shrimp     For the sauce:</span></strong></p>
<p>1 1/2 Tbs peanut or canola oil      2 Tbs tomato paste</p>
<p>1 Tbs Xichuan Peppercorns      1 Tbs rice wine vinegar</p>
<p>4-6 small dried red hot chili peppers, slivered    1 tsp salt</p>
<p>¾” section fresh ginger root, peeled, sliced and slivered   ½ tsp ground black pepper</p>
<p>3 cloves garlic, minced       2 tsp sesame oil</p>
<p>4 scallions (use white and green parts) cut into ½” pieces</p>
<p>½ red or green bell pepper, sliced thinly</p>
<p>1 lb fresh shrimp, peeled and de-veined</p>
<ul>
<li>Heat oil in a wok or heavy saucepan; add Xichuan peppercorns and stir fry for 1 minute on high heat</li>
<li>Remove peppercorns and crush them coarsely with the side of a large knife</li>
<li>Add chile pepper, ginger root, garlic, bell pepper and crushed peppercorns to wok, and stir-fry for 1-2 minutes; Add shrimp and cook over high heat, stirring constantly until shrimp are just cooked through. Add tomato paste, rice wine vinegar, salt, black pepper, sesame oil and scallions, stirring carefully to coat the shrimp. Serve immediately, with white rice.</li>
</ul>

<p>Every Monday night on TLC, viewers join Buddy and his “famiglia” as they battle through another crisis in cake design.  Carlo’s Bakery, the landmark location in Hoboken is the scene of all the drama.  There’s the fully functioning bakery, with trays of goodies, cannolis, lobster tails, 5 deep in customers calling out orders.   Then, there’s the bakery where the cousins and brother-in-laws squeeze past each other in a weekly waltz of pardon me-excuse me’s, only maybe not so gently put .  Add the narrow stairs and elevator each cake must navigate on its way out to a bumpy delivery ride, the customers who change their minds, the orders not correctly handled, and you know why this place needs a Boss.</p>

<p><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;">We caught up with Buddy the Boss at his recent appearance at the Count Basie Theater.  Despite the unexpected snow, the theater was packed, and almost a third of the audience were children…all to watch a guy decorate cakes!  You gotta love NJ.  And you know Buddy loves NJ.  He beams when he talks about the streets of Hoboken and gets teary eyed when he remembers Long Branch fishing trips with his father.  It was Buddy Sr. who bought the bakery in 1964, who trained little Buddy to make icing and cakes and sugar flowers and who gave Buddy the skills he to take over the business, after his passing.  Buddy was just 17 when he lost his father, who he recalls as the “real” cake boss.  And some say his feisty mother, who works at the shop with all his sisters, is the real boss lady.  So do too many bosses spoil the cake?  No way, they only make it sweeter!</span></span></span></p>
<p><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;"><br />

<p><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;">On stage, he is every bit the Buddy you know from TV, only much nicer.  He rocks and bounces as he decorates, just like he does on the show, only without so much yelling.  “They take 90 hours a week and boil it down to 22 minutes, so something’s getting cut out.”   He answers questions from the audience:  He really hated the pink walls….he and the Bridezilla made up…his favorite cake was the aquarium cake. He makes easy jokes , but when he’s decorating, that’s different.   His eyes narrow and his whole body seems to tighten into focus.  “I believe, you gotta put yourself into everything.  If you do the best job you can everyday, the sky’s the limit.  I think I’m the luckiest guy, to do what I love, be surrounded by my family and to make people happy… that’s the best.”</span></span></span></p>

<p>April 22 event featuring thrift store fashions to benefit homeless animals  EATONTOWN, NJ — The Monmouth County SPCA (MCSPCA) presents Second Chance Style, An Evening of Food, Fashion &amp; Fun at Branches (123 Monmouth Road/Route 71 North) in West Long Branch, N.J., on Thursday, April 22, 2010, at 7 p.m. Tickets for the event are $40 each and all proceeds will benefit the homeless animals at the MCSPCA.</p>

<p><strong><span style="text-decoration: underline;">Ingredients </span></strong></p>

<div id="_mcePaste">2 tablespoons extra-virgin olive oil, divided, plus some for drizzling</div>
<div id="_mcePaste">2 tablespoons butter, divided</div>
<div id="_mcePaste">1 small onion, chopped</div>
<div id="_mcePaste">2 cloves garlic, chopped</div>
<div id="_mcePaste">1 cup Arborio rice</div>
<div id="_mcePaste">1/2 cup white wine</div>
<div id="_mcePaste">1 cup peas, defrosted</div>
<div id="_mcePaste">1/2 cup grated Parmigiano-Reggiano, a couple of handfuls</div>
<div id="_mcePaste">2 tablespoons chopped fresh mint leaves, plus a few sprigs for garnish</div>
<div id="_mcePaste">Handful flat-leaf parsley, chopped</div>
<div id="_mcePaste">4 loin lamb chops, each 1 1/2 inches thick</div>
<div id="_mcePaste">1 shallot, thinly sliced</div>
<div id="_mcePaste">1/2 cup black cherry all fruit preserves (recommended: Polaner brand)</div>
<div id="_mcePaste">3 tablespoons balsamic vinegar</div>
<div id="_mcePaste">1/2 teaspoon cracked black pepper, eyeball it in your palm</div>
<div id="_mcePaste">Salt</div>

<div><span style="text-decoration: underline;"><strong>Directions</strong></span></div>
<div id="_mcePaste">Place the stock in a small pot and warm it up over medium low heat.</div>
<div id="_mcePaste">Place an oven rack 8 inches from broiler and preheat broiler to high.</div>
<div id="_mcePaste">Heat 1 tablespoon extra-virgin olive oil 1 turn of the pan, with a tablespoon of butter in a medium skillet over medium to medium high heat. When the pan is hot, add onions and garlic and cook for 2 to 3 minutes the add Arborio and cook a minute more. Add wine and cook it all away, 1 minute. Add a few ladles of warm broth and let that cook off, stirring occasionally. The risotto will take 22 minutes to cook. Add a ladle of broth from time to time until risotto is starchy, creamy and cooked to al dente. Add peas about 2 minutes before serving. Add in cheese, chopped mint and parsley just before serving.</div>

<div id="_mcePaste">When the risotto is half-cooked, 10 minutes from being done, drizzle the chops with extra-virgin olive oil and arrange on a slotted broiler plan. Place chops in oven under hot broiler and cook 8 to 10 minutes for medium rare. Place a tiny pan on the stove over medium heat. Add 1 tablespoon extra-virgin olive oil and shallots to the pan. Cook shallots 2 minutes then add the preserves and whisk them together with balsamic vinegar and black pepper. Heat to a bubble then remove from heat and add remaining pat of butter. Whisk butter into sauce.</div>

<div id="_mcePaste">Season the risotto with salt to taste. Place a generous serving of risotto into shallow dinner plates. Arrange 2 chops on each plate alongside the risotto and drizzle the black cherry pepper glaze over the chops and garnish plates with extra sprigs of mint.</div>

<h2>Grilled Baby Vegetables</h2>
<div>
<div><strong><span style="text-decoration: underline;">Ingredients</span></strong></div>
<div>6 baby zucchini, halved lengthwise, 1/2 pound</div>
<div>2 to 3 baby eggplants, thinly sliced lengthwise, 1/2 pound</div>
<div>12 baby portobello mushrooms, criminis</div>
<div>1/2 lemon, juiced</div>
<div>2 rounded teaspoons Dijon mustard</div>
<div>2 teaspoons grill seasoning, 2/3 palm full (recommended: Montreal Steak Seasoning blend by McCormick)</div>
<div>1 tablespoon Worcestershire sauce, eyeball it</div>
<div>1 large clove garlic, crushed</div>
<div>3 tablespoons extra-virgin olive oil</div>
</p>
<div><strong><span style="text-decoration: underline;">Directions</span></strong></div>
<div>Preheat a grill pan, indoor or outdoor grill to medium high-high heat. Place the vegetables in a large plastic food storage bag. Mix dressing ingredients in a small bowl, stream in the extra-virgin olive oil and beat dressing with a fork. Pour dressing into the food storage bag and seal bag. Coat the vegetables evenly with dressing then grill vegetables a couple of minutes on each side until marked and tender. Arrange on a small platter.</div>

It is how we Greeks express our joy, how we bond, how we remember life’s essentials, sitting around the table eating, for hours.
